Studded strawberry becomes a confectionery craze after the success of 'strawberry of love'
The new dessert made with brigadeiro, white chocolate, and crushed caramel spikes in orders and views on social media.
The new culinary trend called studded strawberry has taken over social media and seen orders skyrocket on delivery platforms and confectionery shops across the country. The sweet treat emerges as an evolution of the 'strawberry of love' (morango do amor), which had dominated searches and the confectionery market the previous year.
How the studded strawberry is made
In the new recipe, the strawberry is first wrapped in white brigadeiro, made with condensed milk, heavy cream, powdered milk, and butter. Next, the fruit is coated in melted white chocolate mixed with crunchy, crushed red caramel pieces. It is these crystals that give it the studded appearance and a shiny finish resembling a jewel.
The explosion of searches and views
Interest in the sweet treat has grown sharply on digital platforms. The first video posted by content creator Daniela Choma has amassed millions of views, while posts by other confectioners and creators also accumulate thousands of hits on Kwai and other social networks. On Google, searches for the dessert increased significantly compared to the previous week.
The impact on sales and iFood
The internet success has translated directly into real-world commerce and delivery apps. Data from iFood shows that orders for studded strawberries jumped hundreds of times in just a few days after searches began on the platform. Large confectionery chains and establishments in cities like Salvador are already adding the novelty to their menus with high sales expectations.
How to prepare the dessert at home
For those who want to make the sweet at home, the process requires preparing a sugar syrup beforehand with water, white vinegar, and red food coloring. After cooking to the hard-crack stage, the sugar sheet is cooled, broken into small crystals, and mixed with melted white chocolate to coat the strawberry, which is already covered in brigadeiro.
